Roasted Salmon Glazed with Brown Sugar and Mustard
This “no-recipe recipe” was brought to my attention by the New York Time’s menu guru, Sam Sifton. It is delightfully easy, delicious and adaptable to any number of servings and thus has become a staple in our house.
Ingredients:
Salmon fillets
Dijon mustard
Brown sugar
Salt and black pepper
Preparation:
1. Preheat your oven to 400 degrees.
2. Make a mixture of Dijon mustard and brown sugar with proportions that suit your taste.
3. Season salmon fillets with salt and pepper
4. Place salmon fillets skin-side down on a lightly oiled, foil-lined (optional) baking sheet. Slather the tops of fillets with the mustard-brown sugar glaze. Place them in the top half of your oven.
5. Roast 12 minutes. Serve.
Note from Susan: If you do not have Dijon mustard, regular yellow mustard is an adequate substitute. ENJOY!
