Susan Barron’s Granola Bars 

½  cup butter

1 cup brown sugar

2 cups quick oats – (I use old fashioned oats)

1 teaspoon baking powder

1 teaspoon vanilla

¼ teaspoon salt

½ cup semi-sweet chocolate bits

1.         Preheat oven to 350º.  Butter an 8-inch square baking pan.

2.         In a medium size saucepan, combine butter and sugar.  Heat while stirring until butter       melts.

3.         Stir in oats, baking powder, vanilla and salt.  Blend thoroughly.  Turn into baking pan.  Spread evenly over bottom of pan.

4.         Bake 20 – 24 minutes or until edges are slightly browned.  Remove from oven.  Let cool about three minutes.  Sprinkle with chocolate pieces. (I return the pan to the oven for 1 minute to melt the chocolate). When melted, spread evenly over the top.  Cool.  Cut into bars.  ENJOY!
